Crispy Sweet & Sour Pork

 

For the Batter:

100g Plain Flour

4 tbsps Corn Flour

11/2 tsps Baking Powder

Pinch Salt

1 dsrt spn Veg oil

Water

 

For the Sauce:

2 tbsps Corn Flour

4oz Light Brown Sugar

Pinch Salt

100 ml Cider Vinegar

3 cloves Garlic Crushed

1 tspn finely chopped Ginger

6 tbsps of Tomato Ketchup

6 tbsps Reserved Pineapple Juice

 

Other:

1 Pork Fillet cut into 1 inch cubes

1 Large Onion Sliced

1 Green pepper seeded and sliced

1 Small can of pineapple chunks in Pineapple Juice

Oil for deep frying

Step 1

To make the batter, sift the flour, corn flour, Baking powder and Salt into a bowl, add the Oil and enough cold water to make a thick smooth batter.

 

Step 2

Mix all of the sauce ingredients together ans place to 1 side.

 

Step 3

Heat the oil in a Wok to deep fry the pork, coat the pork in the batter and carefully drop into the hot oil, batches of 10 at a time until all the pork pieces are fried. Place to 1 side.

 

Step 4

In a fresh pan fry the Onion, Pepper and Pineapple until just soft, it should still have a bite to it. Remove and Place to 1 side.

 

Step 5

Pour the sauce into a clean hot Wok and stir until it thickens and becomes clear red, add the Vegetables and Battered pork and stir fry until everything is coated in the sauce and hot.

Serve Immediately
